  • baking paper
  • 1 egg white
  • 4 firm white fish fillets (150g approx, terakihi, orange roughy or dory)
  • ¼ cup mushrooms, finely sliced
  • ¼ cup courgettes, finely sliced
  • 210 g pouch Wattie’s Wok Creations Sweet Chilli and Lime Stir Fry Sauce

Sweet Chilli

Wattie's® Bit on the Side® Sweet Chilli is a hot and spicy chilli sauce that is great for dipping, as a marinade or condiment on the side. Available in a 300g bottle.


  1. Cut four large hearts from the baking paper. Brush the edge with egg white.
  2. On one side of each heart place a fish fillet. Top with a quarter of the vegetables and about 3 tablespoonfuls of the Wattie’s Wok Creations Sweet Chilli and Lime Stir Fry Sauce.
  3. Fold the remaining piece of baking paper over the fish and fold the edges together all the way around to seal the fish in. Place each parcel on a baking tray.
  4. Bake at 200°C for 12-15 minutes. The timing will depend on the thickness of the fish. Medium size fillets will take 12 minutes, for thicker fillets allow 15 minutes.
  5. Serve with potatoes and a few extra vegetables on the side.

Very easy to make. I used tarakihi, but found the sweet chilli a little too strong as it overpowered the delicate flavour of the fish. I will definitely make this again, though, with another kind of fish
