Spanish Pork Chops with Mediterranean Vegetable Roasters
Liven up your family’s dinnertime with this brilliantly flavoursome pork dish. Zesty chopped tomatoes and green capsicums are married with 100% New Zealand pork chops, dried apricots and Wattie’s Mediterranean Vegetable Roasters to produce a genuine crowd-pleaser.
Ingredients
- 4 x 100% New Zealand Pork loin chops
- 1 onion, peeled and chopped
- 400g can Wattie's Chopped Tomatoes with Green Capsicum
- 1/4 cup finely sliced dried apricots
- 1/2 cup chicken stock
- 600g bag Wattie’s Mediterranean Vegetable Roasters
- 1 Tbsp chopped fresh parsley
- 1-2 tbsp chopped stuffed olives
Method
1. Heat a frying pan with a dash of oil and lightly brown the 100% New Zealand Pork loin chops on both sides quickly.
2. Add the onion to the pan and cook until tender. Add Wattie’s Chopped Tomatoes with Green Capsicum , apricots and chicken stock, stir to combine.
3. Spoon half the tomato sauce into the base of an ovenproof dish. Arrange the browned pork chops on top, slightly overlapping each other. Spoon over the remaining sauce.
4. Scatter the Wattie’s Mediterranean Vegetable Roasters on a separate baking tray.
5. Bake both at 190ºC for about 20 minutes or until the pork is golden and tender. Remove the pork, increase oven temperature to 220ºC and continue to cook the roasters for a further 5minutes or until crisp.
Serve the pork garnished with chopped parsley and chopped olives if wished and accompanied with the vegetable roasters.
