Ingredients

  • 4 large potatoes, peeled
  • 1 ½ Tbsp butter
  • 1 ½ Tbsp flour
  • ½ tsp paprika
  • 2 cups Wattie’s Frozen Peas & Corn
  • 300g smoked fish, flaked
  • ¼ cup chopped parsley

Method

  1. Preheat oven to 180°C.
  2. Cut the potatoes into cubes and cook in a saucepan of boiling water until tender. Drain and mash with a little milk. Set aside.
  3. In a medium saucepan, melt the butter and stir in the flour. Slowly add the milk while stirring to prevent lumps. When all the milk has been added and the sauce begins to thicken, add the paprika, frozen vegetables, fish and parsley. Season with salt and pepper.
  4. Pour the filling into a 6-8 cup capacity ovenproof dish and top with mashed potatoes.
  5. Cook in the preheated oven for 30 minutes or until heated through and the top is golden.
  6. If using the cheese, sprinkle over the potatoes and place under the grill on high heat for 2-3 minutes or until it browns.

Tips

Try this fish pie with salmon pieces or canned smoked fish.

A nice easy recipe to make. Very tasty, but felt it needed more sauce and to be creamier so next time I will add some sour cream or something similar.

We added creamed corn and maggi chicken stock instead of the soup, also celery. every one enjoyed the meal. My daughter says " I dont normally like fish pie but I liked it a little so it was pretty good"

Couldn't find creamy corn soup so used Hearty Corn and Bacon Chowder and instead of using the cheating frozen mashed spud I cooked thick slices of spud and layered them the same way. Worked really well and went down a treat! I have never cooked an easier fish pie!
