• ½ Tegel Smoked Chicken
  • ½ cup Eta Lite and Free Honey Mustard Dressing
  • ½ telegraph cucumber, halved and deseeded
  • 1 mango, peeled and sliced
  • 1 bunch asparagus or green beans, trimmed and blanched
  • 2 stalks lemongrass, finely sliced (optional)
  • 1 red chilli, deseeded and chopped
  • 2 Tbsp chopped fresh mint (optional)
  • 2 Tbsp chopped fresh basil
  • 2 Tbsp chopped fresh coriander

1. Shred the smoked chicken into bite size pieces and toss in the Eta Lite and Free Honey Mustard Dressing. Cover and stand for 30 minutes to marinate.

2. Slice the cucumber and toss with the mango slices, asparagus or beans, marinated chicken, lemon grass, chilli and herbs.

3. Serve quickly after the final tossing and if wished garnish with snow pea sprouts and accompany with boiled baby potatoes.

Very tasty - made too many substitutions the first time and it didn't taste nearly as nice as when I followed the recipe.

Tasty recipe. Chilli just gave that good amount of bite. Shop didnt have any mangoes so just used pawpaw.
