  • 4 thick pork or beef sausages
  • 1 dash oil
  • 2 stalks celery, trimmed and finely diced
  • 1 red capsicum, cored and finely diced (optional)
  • 425 g can Craig’s Spicy Chilli Beans
  • 400 g can Wattie's Mexican Style Tomatoes
  • 12 taco shells


1. Cook the sausages in a dash of oil in a frying pan. Set aside until cool enough to handle. Cut into thin slices.

2. Add the celery and red peppers to the pan and cook quickly over a high heat for about 2 minutes.

3. Add the Craig’s Spicy Chilli Beans, Wattie’s Mexican Spiced Tomatoes and the sausages and simmer gently for about 5 minutes until the sausages are hot .

4. Fill the tacos with the sausage and bean mix, and garnish with your favourite toppings, like those listed above.

nice n basic
possibly some finely chopped carrot with celery as well

I don't tolerate beans in any way shape or form so I substituted with chopped tomato, a sprinkle of cheese and guacamole. Delicious!
