Ingredients

  • 400g lean beef mince
  • 400g can Wattie’s Mexican Style Tomatoes
  • 420g can Wattie's Chilli Beans Mild
  • Corn chips
  • Grated cheese

  • Avocado Cream:
  • 1 ripe avocado
  • ½ cup lite sour cream
  • 1 Tbsp lemon juice

Mexican Style Tomatoes

Ripened on the vine under the Hawke’s Bay sun, Wattie’s Mexican Style Tomatoes are diced and blended, then seasoned for an authentic Mexican flavour.

Chilli Beans Mild

To create NZ's top-selling chilli beans we add nourishing red kidney beans to a thick and rich blend of tomatoes, capsicum, onion and chilli powder. The delicious mild flavour is suitable for the whole family.

Method

  1. Heat a dash of oil in a frying pan and brown mince.
  2. Stir in Wattie’s Mexican Style Tomatoes and Wattie’s Chilli Beans Mild. Simmer for 10-15 minutes until mince is cooked and beans are hot. Serve over corn chips. Scatter over grated cheese and serve with Avocado cream.

Avocado Cream:

  1. Blend together avocado, sour cream and lemon juice to a smooth consistency. Season to taste

I think it is the Mexican tomatoes that make this dish. I used to add all my own spices but it was always too hot for my children. so now I use the Mild Chilli Beans but I am hoping to gradually move up to Medium chilli Beans. Quick and easy to prepare and much better for you than take-away food in general. And if you don't have sour cream use plain yoghurt instead.

This is a favourite in our house - one of the few meals that both our kids and the adults love. I cut up all the extras (corn cut off the cob, capsicum, tomato, grated carrot, coriander, avocado, cheese, sour cream, extra chilli sauce) and everyone makes theirs up as they like it. :-) Works well on rice or in wraps too. Double the batch and freeze. Best of all, it really is super quick and easy!

I substituted the tomatoes with a can of Watties Seasoned Tomato Puree (as our family is not big on canned tomatoes) and it was delicious. My husband offered to cook the meal (not a regular occurrence!) and he had it on the plate within 20 minutes! So all in all a positive result for everyone! Nacho's are easy to put together; fills the tummy!; and everyone loves them. I either create a nacho feed on a huge oven-baking plate and cook in oven to serve hot; or do a cold feed or, and what people really enjoy, is set out all the ingredients on the kitchen bench and everyone makes their own.
