  • 500 g 100% New Zealand Trim Pork Schnitzel, sliced
  • 1 red onion, peeled and sliced
  • ½ red capsicum, deseeded and sliced
  • 2 courgettes, sliced
  • 400 g Wattie's Pesto Style Tomatoes
  • 420 g can Wattie's Original Pasta Sauce
  • ½ cup grated Edam cheese

Pesto Style Tomatoes

Ripened on the vine under the Hawke's Bay sun, Wattie’s Pesto Tomatoes are blended with onions and basil, garlic, Parmesan, olive oil, and pinenuts.


1. Preheat oven to 180°C.

2. Heat a dash of oil in a frying pan, brown pork in batches and place into the base of a 6-cup capacity casserole dish.

3. Add onion and red capsicum to the pan and cook for 2-3 minutes, then add courgettes and cook for a further 2 minutes. Spoon the vegetables layer to the pork.

4. Mix together the Wattie’s Pesto Style Tomatoes
and Wattie’s Original Pasta Sauce
and pour over the meat and vegetables. Sprinkle with cheese and bake in the oven for 30 minutes.

5. Serve with your favourite pasta.


This can also be served over rice instead of pasta.

I put the lid on and baked it for an hour and a half, without the cheese, since I had the time and it was very tender and tasty. I added the cheese and took the lid off towards the end, but perhaps another time I'll just sprinkle parmesan on top when I serve it or just leave it out.

instead of pork i used diced chicken breast and added some herbs and spices when cooking the chickn. I also used different vegs that added alot of flavor. This was a wonderful meal and I would make it again

I added extra grated vegies to make the dish more filling. Great way to get kids to eat more vegetables. It was a hit with the children
