• 1 onion, peeled and finely chopped
  • 1 Tbsp butter
  • 1 cup SunRice Basmati - Indian Aromatic Rice
  • 4 green cardamom pods
  • 1 ½ cups chicken stock
  • ¼ cup toasted cashews (optional)

1. Cook the onion in the butter in a medium-sized saucepan until tender.

2. Stir in the SunRice Basmati – Indian Aromatic Rice and cook until the grains turn from opaque to white.

3. Stir in the chicken stock and cardamom pods and bring to the boil. Reduce the heat, cover and simmer gently for 12 minutes. Remove from the heat, remove the cardamom pods, if wished and add the toasted cashews, if using.
