Ingredients

  • 250 g softened butter
  • ¾ cup brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 2 ½ cups flour
  • 2 ½ tsp baking powder
  • 410 g can Wattie’s Peaches Sliced in Light Syrup
  • 1 large Granny Smith apple, peeled and sliced

Method

1. Preheat oven to 180°C. In a bowl or food processor beat together the butter, brown sugar, egg and vanilla essence until creamy and well mixed.

2. Add the flour and baking powder and stir or pulse to mix well.

3. With floured hands press 2/3 of the mixture into the base of a 22cm square cake tin lined with baking paper.

4. Drain Wattie’s Peaches Sliced in Light Syrup and reserve syrup. Place on dough with the apple slices.

5. Dot remaining mixture over the top of the fruit.

6. Bake for 35-40 minutes, until cooked and top is golden. Remove from the oven and allow to cool. While still warm, brush with syrup glaze or leave until cold and dust with icing sugar to serve.

7.To make the syrup glaze, pour the peach syrup into a small saucepan. Bring to the boil and allow to reduce by half.

Tips

Make sure the butter is very soft, but not melted, which will make mixing much easier.

For a delicious variation, replace the apples with pears or your favourite summer berries.

Made this last night. Absolutely yummy. But I wouldn't call it "no fuss", as you have to slice peaches and prepare the apple and dot the rest of the mixture over the top.

It was one of the most delicious desserts I've ever made, and so easy! Melt in your mouth and everybody loved it. I baked it for 35 minutes and it wasn't enough to cook the apple all the way through, maybe I'll skip the apple and use a different canned fruit next time

Forget the feeding 8 people. Mine lasted one night to feed 3 ----they didn't eat it all for dinner though but when I went to make up school lunches, I had intended putting some in their boxes for lunch the following day. Famous last words they had eaten it all up that night. I should have known better but the family all agree that your recipies are all fool proof and guaranteed to be a big hit.

Took to my quilt club for afternoon tea and had to fight to even get a piece, it was demolished! Thank you for the great recipe, will be making it for my family again on Sunday!

who doesn't like a nice fruit shortcake?!?
We think it's brilliant cold and used peaches in juice rather than syrup. It makes a great dessert for taking to a potluck tea.
