1. Cook the onion in a dash of oil in a large frying pan for 4-5 minutes until tender.
2. Add theCraig's Mexican-Style Chilli Beans Medium Hot and tomatoes and simmer gently for 5 minutes.
3. Dice the Hellaby's Corned Beef, add to the beans and heat through, stirring regularly.
4. Arrange 1 packet of your favourite nachos on a serving plate. Cover with the bean sauce. Top with the avocado topping and sour cream.
Dice the avocado and mix with the spring onion, coriander or parsley and lemon juice.
