Mexican Pizza
With just a few simple ingredients you can turn the humble pizza into a memorable Mexican mouthful.
Ingredients
- 425g can Craig's Chilli Beans Mild
- 2 x 22cm pizza bases
- 150g salami diced
- 1/2 cup stuffed green olives, chopped (optional)
- 200g feta crumbled or whole mozzarella, sliced
- Topping
- 1 avocado, peeled, stoned and chopped
- 2 spring onions, sliced
- 2 Tbsp freshly chopped coriander or parsley
- 1 lime, freshly squeezed
Method
1. Divide the can of Craig’s Chilli Beans evenly between the two pizza bases, sprinkle with diced salami and stuffed green olives. Place the slices of feta or mozzarella on top.
2. Cook the pizzas at 220°C for 7-8 minutes or until golden and hot.
3. Scatter over the avocado, spring onions, coriander and squeeze over the lime juice.
Serve immediately.
