Lemon Scented Hoki with Tomato & Garlic Pasta
Hoki is a versatile and delicious fish. Here, it sits centre stage while those three renowned performers, lemon, tomato and basil, add their distinctive tastes to a rustic Italian base of garlic pasta. Bellissimo!

Ingredients
- 425g box Sealord frozen Simply Natural Hoki Fillets
- grated zest 1 lemon
- 3 courgettes, trimmed and sliced
- 1/2 cup white wine or water
- 400g can Wattie's Chunky Tomato and Roasted Garlic Pasta Sauce
- 300g dried fettucini pasta
- 2 Tbsp chopped fresh basil leaves
- 1/4 cup grated parmesan cheese
Method
1. Brush Sealord frozen Simply Natural Hoki Fillets lightly with oil. Sprinkle each with a little lemon zest and season with black pepper.
2. Cook the Dory fillets from frozen in a heated frying pan for about 4 minutes or until they just start to colour. Turn.
3. Scatter the courgettes around the fish and then pour over Wattie’s Chunky Tomato and Roasted Garlic Pasta Sauce and white wine. Cover and simmer gently for 10 minutes, or until the fish and courgettes are cooked.
4. Cook fettucini in boiling salted water for 12 minutes or until tender. Drain well.
5. Spoon the sauce over the hot pasta and serve the Hoki fillets on top. Garnish with basil and Parmesan cheese.
