Indian Eggs

Even if you are not a lentil fan you need to try this to believe how good it tastes. Vegetarians can leave out the sausages and for those who want to substitute the sausages can use bacon. Keep these ingredients in the pantry and you always have a quick meal on the ready.

Indian Eggs

Ingredients

  • 4 small cooked spicy sausages
  • 400g can Craig's Lentils in brine, drained
  • 400g can Wattie's Indian Style Tomatoes
  • 4 eggs
  • 2 Tbsp chopped parsley or coriander

Method

1. Heat a dash of oil over a medium – high heat in a large oven proof frying pan and pan fry sausages until crispy.

2. Add Craig’s Lentils and Wattie’s Indian Style Tomatoes and cook for 3 minutes.

3. Make 4 hollows in the mixture and break an egg into each, reduce heat and allow the eggs to cook. If wished, place under a grill to finish cooking.

4. Sprinkle with parsley or coriander and serve with crusty toasted bread for brunch or add a salad for a main meal.

I leave out the sausages, add a pile of vegetables (eg spinach, carrot, cauliflower, courgette) and have a quick and easy vegetarian meal.
