Honey Mustard and Smoked Chicken Pasta Salad
What could be more summery than a fresh approach to a favourite salad? With smoked chicken, your choice of bow or penne pasta, spring onions, celery, herbs and grapes, this cool, creamy combo is topped off with a sweet, low fat honey mustard dressing
Ingredients
- 400g pasta bows or penne
- 1 Tegel Smoked Chicken
- 3 spring onions, trimmed and sliced
- 150g grapes, cut in halves
- 3-4 sticks celery, sliced finely
- 1-2 Tbsp chopped fresh fennel, dill or basil
- grated rind 1 lemon
- 1 cup ETA Gourmet Kamahi Honey & Mustard Dressing
Method
1. Cook pasta in boiling salted water for 12 minutes or until tender, drain and rinse in cold water to stop the cooking. Drain well.
2. Pull the chicken into bite size pieces, removing the skin.
3. Toss together the pasta, smoked chicken pieces, spring onions, grapes, celery, herbs, lemon rind, and ETA Gourmet Kamahi Honey & Mustard Dressing.
