Herbed Porcupines

If we called them meatballs they wouldn’t be so much fun. Kids love them, but that’s no reason why adults shouldn’t eat them too.

Herbed Porcupines

Ingredients

  • 1/2 cup uncooked long grain rice
  • 1/4 cup chopped fresh herbs
  • salt and pepper to season
  • 1 Tbsp oil
  • 1 onion, peeled and finely sliced
  • 1 1/2 cups water
  • 550g can Wattie's Just Add Hearty Savoury Mince Simmer Sauce
  • 500g lean minced beef

Method

1. In a bowl mix together the minced beef, rice, herbs and season with salt and pepper.

2. Roll into 12-14 even shaped balls.

3. Heat the oil in a frying pan and add the sliced onion. Cook 3-4 minutes until softened. Add the Wattie's Just Add Hearty Savoury Mince Simmer Sauce and water and bring to the boil.

4. Add the meatballs and cover. Simmer gently for 30 minutes, turning once during the cooking time.

Serve with vegetables of your choice.

My family love a variation on this. I brown the mince & rice balls & saute onion. Put into casserole with 1tblsp chicken stock & squirt worchestershire sauce, season & add tin Watties tomatoe soup, & equal quantity of water, give a mix around and bake 45 minutes or so at moderate heat

Have adapted this recipe by using Watties tomatoes in sweet chilli sauce as a sauce base - adults really enjoy this spicier dish.
