Greek Style Salad
It's the Greek island classic that's made its way into the hearts of millions the world over. So bring it home to your place! This recipe takes all the ingredients we've all come to expect - feta, olives, red onion, spinach and tomatoes - and adds in a base of hearty chickpeas. Just perfect all summer long.

Ingredients
- 3-4 cup baby spinach leaves, rinsed and drained
- 2-3 tomatoes, cut into wedges
- 100g feta cheese, cubed
- 300g can Craig's Chickpeas in brine, rinsed and drained
- 1/2 red onion, peeled and sliced
- 1/4 cup Italian parsley leaves
- 8 black olives
- 1/2 cup Eta Gourmet Aged Balsamic Vinaigrette with Horopito
Method
1. Toss together the spinach leaves, tomatoes, feta, chickpeas, onion, parsley leaves, olives and Eta Gourmet Aged Balsamic Vinaigrette with Horopito , and serve immediately.
Serve with fresh bread rolls.
