  • 3-4 cups baby spinach leaves, rinsed and drained
  • 2-3 tomatoes, cut into wedges
  • 100 feta cheese, cubed
  • 300 g can Craig's Chickpeas in brine, rinsed and drained
  • ½ red onion, peeled and sliced
  • ¼ cup Italian parsley leaves
  • 8 black olives
  • ½ cup Eta Gourmet Aged Balsamic Vinaigrette with Horopito


1. Toss together the spinach leaves, tomatoes, feta, chickpeas, onion, parsley leaves, olives and Eta Gourmet Aged Balsamic Vinaigrette with Horopito, and serve immediately.

Serve with fresh bread rolls.
