Ingredients

  • Lamb Koftas
  • 400 g lean lamb mince
  • 2 Tbsp chopped fresh parsley
  • 1 tsp crushed garlic
  • 1 tsp ground cumin
  • 1 ½ tsp ground coriander
  • 8 wooden kebeb skewers, soaked in cold water

  • Couscous Salad
  • 1 cup couscous
  • 1 ¼ cups boiling water or vegetable stock
  • ¼ cup slivered almonds, toasted
  • ½ cup chopped dried apricots
  • ¼ cup chopped fresh parsley
  • ½ cup ETA Lite and Free Feta and Garlic Dressing

Method

1. To make Lamb Koftas, mix together lamb mince, parsley, garlic, cumin and coriander. Season with salt and pepper.

2. Divide mixture into 8 balls. Form each ball around the pointed end of a skewer. Refrigerate for at least 30 minutes.

3. Barbecue koftas over medium heat until browned all over and just cooked through – about 6 minutes.

4. To make Couscous Salad, place couscous in a bowl. Pour in boiling water or vegetable stock. Leave to stand for 5 minutes. Fluff grains with a fork and leave to cool.

2. Mix through almonds, apricots and chopped parsley. Season to taste.

Serve Koftas on couscous salad and pour over ETA Lite and Free Feta and Garlic Dressing. Serve with a green salad.

Tips

Note:
Koftas make great nibbles with drinks. Make them smaller and serve with ETA Lite and Free Feta and Garlic Dressing as a dip.

Very tasty! I made them with beef and normal greek yoghurt and it definately worked. These were just with things I already had in the house. Even my partner was very impressed!!

Easy, tasty and my three year old enjoyed helping to make it. My personal taste requires more flavour in the koftas but it was great for both our kids. I used plain greek yoghurt for a more authentic flavour too. The cous cous was excellent - we all loved the crunch of the roasted almond slivers in combo with the apricots. I'll definitely make it again. :)
