Really yummy dish - great for a lunch and very filling!
Golden Indian Pilaf
A pilaf is an Indian 'one pan' rice dish made with basmati rice. An easy to prepare dish with an Indian twist.

Ingredients
- 1 onion, peeled and finely chopped
- 2 tsp crushed garlic
- 2 tsp minced ginger
- 2-3 Tbsp curry paste or powder
- 2 cups Indian basmati rice
- 1 red capsicum and or 2 stalks celery, diced
- 3 cups chicken stock
- 1-2 95g cans Greenseas Tuna with Lime and Cracked Black Pepper
- 3 hard boiled eggs, quartered
- fresh coriander
Method
1. In a lidded saucepan, cook the onion, garlic and ginger in a dash of oil until softened.
2. Add the curry paste or powder, Indian basmati rice and vegetables and cook an extra minute.
3. Stir in the stock, cover, lower the heat and simmer for 12 minutes. Remove from the heat and stand for a further 2 minutes before fluffing the rice with a fork.
4. Lightly stir in the Greenseas Tuna with Lime and Cracked Black Pepper , eggs and coriander if using. Serve hot.
