Tips

Try this recipe with chicken or a mixture of lamb and chickpeas.

Method

1. Heat a dash of oil in a non-stick frying pan and brown lamb in batches. Add garlic and cook until softened. Pour in the Wattie’s Moroccan Style Tomatoes and add the apricots. Simmer over a gentle heat for 10-15 minutes or until sauce is thickened and lamb is cooked.

2. To make the couscous place in a bowl and pour over the boiling water. Cover and set aside for 5 minutes, then fluff with a fork.

3. Cook both bags of Wattie’s SteamFresh Sensations in the microwave according to the directions on the packet. Drain off any excess liquid and stir through the couscous with lemon juice and zest, garnish with almonds. Serve alongside the Moroccan Lamb.
