Fish in Sweet Curry Sauce

This is a great curry when you’re in a hurry. Served with a delicious banana raita – a traditional yoghurt based accompaniment to Indian food.

Fish in Sweet Curry Sauce

Ingredients

  • 2 x 400g cans Wattie’s Indian Style Tomatoes
  • 4 x 150g pieces firm white fish fillets (Hapuka is great)
  • 1-1 1/2 cups Wattie's frozen Choice Cut Green beans
  • 2 Tbsp chopped fresh coriander
  • Banana Raita

  • 1 banana, peeled and diced
  • 1 cup non fat unsweetened yoghurt
  • 1 tsp minced fresh ginger
  • pinch of salt

Method

1. Place the two cans of Wattie’s Indian Style Tomatoes into a lidded frying pan and simmer gently until reduced by 1/3rd.

2. Arrange the fish fillets on top in one layer.

3. Cover and simmer gently for 3 minutes. Turn the fish over in the sauce and sprinkle the Wattie’s frozen Choice Cut Green Beans on top and continue to simmer covered for about 4-5 minutes until the fish and beans are cooked. The cooking time will depend on the thickness of the fish fillets. Stir fresh coriander into sauce.

Serve with the Banana Raita and Poppadums on rice.

Banana Raita:

Mix all ingredients together.
