Father's Day Hashbrowns with Creamy Scrambled Eggs
Dad'll remember this scrumptious feast, long after he's thrown out those ties.
Ingredients
- 8 Wattie's Hash Browns Original
- 4 tomatoes
- 4 eggs
- 1/2 cup cream or milk
- 150 g shaved ham, cut into 1.5cm slices
- chives to garnish
Method
1. Bake the Wattie’s Hash Browns according to the directions on the packet.While they are cooking prepare the scrambled eggs.
2. Turn the Hash Browns midway through the cooking time and place whole tomatoeson the tray bedside them. Return to the oven.
3. In a microwave proof bowl, beat the eggs and cream together with a fork or whiskand season with salt and pepper. Cook on high for 1 minute 30 seconds, stiroutside edges gently into centre, cook on high for a further 45 seconds, stir gentlyand fold in the shaved ham.
4. Place 2 crispy cooked Hash Browns on 4 serving plates with roasted tomatoes, topwith creamy scrambled eggs and ham.
Garnish with chives.
