1. Bake the Wattie’s Hash Browns according to the directions on the packet. While they are cooking prepare the scrambled eggs.
2. Turn the hash browns midway through the cooking time and place whole tomatoes on the tray bedside them. Return to the oven.
3. In a microwave proof bowl, beat the eggs and cream together with a fork or whisk and season with salt and pepper. Cook on high for 1 minute 30 seconds, stir outside edges gently into centre, cook on high for a further 45 seconds, stir gently and fold in the shaved ham.
4. Place 2 crispy cooked hash browns on 4 serving plates with roasted tomatoes, top with creamy scrambled eggs and ham.
Garnish with chives.
