Ezi Sunday Brunch
Bacon and eggs don’t have to be ordinary. In this recipe they’ve totally reinvented themselves – in a tasty combo with Wattie’s Extra Cheesy Baked Beans.
Ingredients
- 1 French stick
- 2 eggs
- 1 cup milk
- salt and pepper
- butter for panfrying
- 8 slices bacon
- 420g can Wattie's Extra Cheesy Baked Beans
Method
1. Cut the french stick on an angle into long 2-3cm thick slices.
2. In a bowl beat together the eggs and milk and season well with salt and pepper.
3. Heat a good knob of butter in a frying pan and allow to become hot. Dunk three or four slices of bread into the milk mixture and place into the hot pan. Cook over a moderately hot heat for about 1 minute on each side. Place on a plate and keep warm in a 160°C oven while you cook the rest. Add more butter as needed.
4. Add the bacon to the pan when you have finished cooking the bread and cook until crispy. Heat the Wattie's Extra Cheesy Baked Beans in a saucepan or in the microwave.
To serve
Pile a few slices of French bread onto a plate and spoon over the Wattie's Extra Cheesy Baked Beans and garnish with the crispy bacon.
