Ingredients

  • 2 pork loin chops (approx 350g)
  • 1 small onion, sliced
  • 1 small apple, peeled, quartered and sliced
  • 410 g Wattie’s Italian Style Cannellini Beans
  • 1 bay leaf (optional)
  • 1 handful chopped fresh parsley

Method

1. Preheat oven to 180°C. Place the pork chops in an oven-proof casserole dish. Scatter over the onion and apple slices.

2. Pour over Wattie’s Italian Style Cannellini Beans. Add 1⁄2 can of water and bay leaf if using. Cover. Cook for 1 1⁄4 - 1 1⁄2 hours until the pork is tender. Stir through chopped parsley.

3. Serve with rice or creamy mashed potato and your favourite green vegetables on the side.

Not enough flavour, the bay leaf overpowered everything else, and half a can of water was to much which made the liquid to runny

Hi Bruce, thanks for your comments. The bay leaf is optional so if you don’t like flavour it is fine to leave out. These recipes are well tested however if you found it too runny reduce the amount of water. We hope this helps.

I have cooked this dish often and find it great. I find that cooking for about 1 3/4 to 2 hours is best. The meat just falls off the bone and is tender. Maybe its my oven.

In South Africa we don't get Wattie's products and so I have to use substitutes. However for this recipe I couldn't find anything similar to the Italian Style Cannellini beans - had to use plain Cannellini beans, and used the juice they were in for the liquid. I added some dried "Italian Herbs" and some fresh basil from the garden but the colour of the dish was rather drab and uninteresting compared to the photo of yours. I'm not asking for Wattie's trade secrets but would like to know what I should add to give the dish more Italian colour and flavour.

We're so sorry in the delay of responding to you.

To give the dish more color and flavour using plain Cannellini beans, we suggest the following:

Soften a small onion and a couple of cloves of garlic in a saucepan in a little olive oil. Add a 400g can of tomatoes in juice . Add 1/2 tsp of dried oregano. Bring to the boil and then allow to boil with the lid off until the sauce is reduced by 1/3. Drain the Cannelini beans and discard the liquid. Add the beans to the tomato sauce along with a tablespoon of freshly chopped basil. This can now be added to the pork dish that you are wanting to make.

Lovely! I couldn't get Watties Italian style cannellini beans so just used plain cannellini beans mixed with Watties Italian tomatoes. I also ramped up the herbs just a little by including fresh oregano etc., from my garden. Thoroughly enjoyable. Pork melted in mouth. Hubby very happy. Thank you! Love your recipes!
