Ingredients

  • ½ red onion, finely chopped
  • ½ capsicum, deseeded and finely diced
  • 1 Tbsp chopped fresh thyme or 1 tsp dried
  • 2 sheets puff pastry, defrosted
  • 8 Tegel Traditional Chicken Sausages
  • 400 g can Wattie's Mexican Style Tomatoes
  • 1 tsp finely grated lime zest

Method

1. Preheat oven to 220ºC.

2. Combine red onion, capsicum and thyme in a small bowl, mix well.

3. Cut each pastry sheet into 4 squares. Place 2 teaspoonfuls of onion mixture diagonally across each pastry square. Place a Tegel Traditional Chicken Sausage on top of onion mixture.

4. Lift the triangular pieces of pastry either side of the sausage, so they slightly overlap the top, brush edges with water and press firmly together.

5. Place on a baking paper lined oven tray, brush pastry with a little milk or beaten egg and bake for 20-25 minutes or until golden and the sausages are thoroughly cooked.

6. Gently heat Wattie’s Mexican Style Tomatoes in a saucepan, add Wattie's frozen Chuckwagon Corn and stir until hot, season with lime rind.

7. Serve sausage rolls with Mexican tomato salsa.

Made them using pork sausages. Yummy. Served with mashed potato and peas/corn. Simple and easy. Leftovers were yummy cold the next day. served with Spicy BBQ sauce.

I tried this recipe for a party on the weekend, it was awesome.
the only thing i did differently was, I used tegal garlic & herb chicken sausages, and i wrapped the whole sausage in the pastry, then cut them up after they were cooked. Easy recipe and the garlic and herb sausage flavour was yummy

I tried this recipe after they showed in tv, we thought it's great idea to use away leftover sausages. So, tried this for lunch and gobbled up 2rolls. Boy it tasted so good. I liked the onion and capsicum they smelled so nice and so tasty. Thanks.

As quick and easy as the commercial led me to believe. Didn't bother with the capsicum or the thyme as they were for a chil's birthday party - they were a hit with young and those of us that are less young :)
