not a lover of pork but i must say this is delicious as the crackle has a nice flavour.
Crispy Apricot Roast Pork
A great dish for a special occasion – boned pork roast stuffed with a delicious apricot flavoured stuffing and roasted with apricot halves.
Ingredients
- 1.5 kg 100% New Zealand Pork boned loin, well scored
- 410g can Wattie's Apricot Halves in Clear Fruit Juice
- 1/2 cup fresh white breadcrumbs
- 2 tbsp freshly chopped parsley
- pepper
- oil or lemon juice
- salt
- 1/4 - 1/2 cup Wattie's Bit on the Side Spiced Apricot Sauce
Tips
Allow the roast pork to rest for 10 minutes before carving and serving with the apricots and your favourite vegetables or salad.
Method
1. Place the 100% New Zealand pork skin side down on a chopping board. Spread inside of the pork roast with the Wattie's Bit On The Side Spiced Apricot Sauce , sprinkle with fresh breadcrumbs and parsley, season with pepper.
2. Roll together and secure with skewers or string.
3. Rub the well scored pork with oil or lemon juice and salt and roast at 200°C for 20 minutes and then lower to 160°C for 1 hour or until the pork is cooked. You can tell by piercing the pork and if the juices are clear, the pork is cooked. If still pink, cook a little longer.
4. Drain the Wattie's Apricot Halves , place on a foil-lined tray, brush with a little extra apricot sauce or sprinkle with a little caster sugar and glaze under a hot grill.
