Juicy and tasty
Creamy Tropical Muffins
Picture this; it’s Sunday morning, the sun is coming in through the kitchen window and the warm fruity smell of these divine muffins is wafting through the house. Will a dozen be enough?
Ingredients
- 2 cups flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1/2 cup sugar
- 1 cup bran
- 425g can Wattie's Tropical Fruit Salad in fruit juice
- 1 egg
- 3/4 cup yoghurt
- grated zest of 1/2 an orange
- 100g butter, melted
- about 1/2 cup cream cheese
Method
1. Sift the flour, baking soda and baking powder into a bowl. Stir in the sugar and bran.
2. Put the Wattie's Tropical Fruit Salad with juice, egg, yoghurt and orange zest into a food processor and process until roughly chopped.
3. Pour the fruit into the dry ingredients and fold together, adding in the butter as you go.
4. Half fill 12 well greased muffin tins. Place a teaspoon cream cheese in the centre of each and top with the remaining muffin mixture.
5. Bake at 220°C for 15-18 minutes until well risen and golden.
Cool in the tin for 5 minutes before serving.
