Creamy Rice Brulees
An easy to prepare traditional rice dessert that the whole family will love.

Ingredients
- 420g can Wattie's 99% Fat Free Vanilla Creamed Rice
- 1/4 cup thickened cream or thick Greek-style yoghurt
- grated zest from 2 lemons
- 410g can Wattie's Peaches Sliced in Clear Fruit Juice (well drained)
- 1 cup caster sugar
- 2 Tbsp water
Tips
Serve within one hour.
Method
1. Mix together the Wattie's 99% Fat Free Vanilla Creamed Rice with the thickened cream and lemon rind.
2. Dice the drained Wattie's Peach Slices and place in the bottom of 4-5 x 3/4 cup ramekin or heat-proof individual-serve dishes. Spoon the creamy rice mixture on top.
3. Stir the caster sugar and water in a saucepan until dissolved and then boil rapidly until it turns light golden, do not stir while boiling.
4. Once golden pour immediately onto a baking paper lined tray. When cold crush with a rolling pin or in a food processor until fine. When ready to serve, sprinkle a thick layer over the rice puddings and then place under a hot grill until the toffee melts and is smooth. Cool before serving.
