Courgette & Tuna Rosti with Garlic Mayo
Summer courgettes and new potatoes make this a superb seasonal dish and the tuna with a hint of lime and cracked pepper add a zing you will enjoy.
Ingredients
- 2 courgettes
- 2 potatoes, peeled
- 1 egg
- 95g can Greenseas Lime and Cracked Black Pepper Tuna
- Heinz Seriously Good Aioli
Method
1. Grate the courgettes and potatoes into a paper towel lined colander. Place more paper towels on the top and press out the water. Repeat this with fresh paper towels until all the dampness has been removed. Stand for a few minutes until the liquid has drained away.
2. Drain the liquid from Greenseas Tuna and mix with egg and grated vegetables.
3. Heat a dash of oil on a medium heat in a non-stick frying pan. Place heaped teaspoonfuls of mixture into the frying pan and push down flat. Cook for 2-3 minutes each side until golden. Place a dollop of Heinz Seriously Good Aioli on each andserve with a grind of fresh black pepper.
