Chuckwagon Hash Fritters

Potato and sweetcorn fritters made very very easy. Teach your kids (or flatmates) the recipe and ask them to deliver them to you in bed on Sunday morning.

Chuckwagon Hash Fritters

Ingredients

  • 1 cup Wattie's frozen Chuckwagon Corn
  • 500g box Wattie's frozen Hash Browns
  • 4 spring onions, trimmed and finely chopped
  • 1/2 cup self-raising flour
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/4 cup chopped parsley
  • 1 Tbsp mustard (optional)

Method

1. Defrost the Wattie's Hash Browns for 1 minute in the microwave then chop into 1cm dice.

2. In a bowl toss together the diced hash browns, Wattie's Chuckwagon Corn , spring onions, self raising flour and salt.

3. In a clean bowl or jug beat together the eggs, milk, parsley and mustard. Gently mix the milk into the hash brown mix.

4. Cook large spoonfuls in a hot greased pan frying pan for about 4 minutes on each side, turning once only.

Serve hot with grilled bacon and golden syrup.
