Ingredients

  • 350 g bag Wattie's frozen Free Flow Spinach, defrosted
  • 3 Tbsp cream cheese
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp nutmeg
  • 2 sheets frozen pre-rolled puff pastry
  • 4 Tegel Chicken breast fillets, skin removed
  • milk to glaze

Method

1. Preheat oven to 220°C. Mix the Wattie's Frozen Free Flow Spinach with the cream cheese, nutmeg, salt and pepper.

2. Take the pastry sheets and cut in half diagonally. Place 1/4 of the spinach mixture in the centre of each triangle and place the Tegel Chicken Breast on top.

3. Bring the long ends down to cover the chicken and fold the thicker corner on top to completely enclose. Pinch ends together.

4. Transfer to a greased baking tray. Brush with milk to glaze. Bake for 15-20 minutes until hot and golden.

Easy & very tasty. Try a little very finely chopped onion mixed through with the spinach, cream cheese etc. or some tomato relish or chutney spread on the chicken breast.

Yummy. Easy. Look great too. I added crushed garlic and finely chopped onion. Like the above suggestions too. Will try.suggestions from other cooks - like the sweet chilli idea actually.

Would make again but perhaps not use quite as much spinach as couldnt fit mixture into the two sheets of pastry - had to use another sheet. Also chopped up and precooked the chicken.

This is my all time Favourite meal.
I sometimes make little ones in a muffin tray, or do a large pie in a pie dish a just chop the chicken smaller. Both ways turn out great.

I have been making this for years, but I make it with one whole sheet of pastry - it is very filling and you don't need to serve anything with it. I tried using the sweet chilli cream cheese, but it took over the dish, so now I put the sweet chilli sauce on the side. My family love this meal and it is so easy to prepare. I also use fresh spinach - there is less water in it.

This is such a yummy recipe and it can be served either hot or cold! I usually get four pies out of two chicken breasts as I slice each breast in half. It also means that you can add more vegetables to the pies.
