Chicken Sausage Satay and Vegetable Rice
The flavour of satay is always a favourite and easy to make with this vegetable rice on the side topped off with roasted peanuts. Make extra satay as it freezes well to have on hand for another quick meal.
Ingredients
- 8 chicken sausages
- 1 medium leek, trimmed, rinsed and sliced or 1 onion, finely sliced
- 425g can Wattie's Creamy Satay Stir-fry Sauce
- 350g pkt Wattie's Steamfresh Vegetables, Baby Carrots, Cauliflower, & Broccoli
- 2-3 cups freshly cooked hot rice
- 1/4 cup roasted peanuts, roughly chopped
Tips
1 cup uncooked rice = 2-3 cups cooked rice.
Method
1. Heat a deep non-stick frying pan with a dash of oil and gently pan-fry chicken sausages over a medium heat, until golden and thoroughly cooked. Remove from pan and when cold enough to handle cut into 2cm thick slices and set aside on a plate.
2. Add a little extra oil to the frying pan, gently fry leek until tender. Stir in the Wattie’s Creamy Satay Stir-fry Sauce , add sliced sausages and heat gently for 5 minutes or until heated through.
3. Place the Wattie’s Steamfresh Vegetable bag front side down on a microwavable plate. Do not pierce or open the bag. Microwave on HIGH power/100% for 4 1/2 minutes. Remove the bag from the microwave and stand for 1 minute. Carefully cut open the bag with scissors and tip into the steaming hot freshly cooked rice, add peanuts and stir gently to combine. Serve garnished with coriander or parsley and serve beside the creamy Chicken Sausage Satay.
