Chicken Cacciatore
This is the sort of recipe that makes people think you’ve got an Italian grandmother! Boneless chicken thighs stay tender and moist in this style of cooking.

Ingredients
- 1 onion, peeled and sliced
- 1 tsp crushed garlic
- 250g button mushrooms
- 6-8 Tegel Fresh Skinless Chicken Thigh Fillets
- 1/2 cup white wine or water
- 420g can Wattie's Condensed Tomato Soup
- a few sprigs of fresh thyme
Tips
Serve on rice with your favourite green vegetables.
Method
1. Heat a dash of oil in a lidded frying pan and quickly cook the onion, garlic and mushrooms for 2 minutes or until lightly brown. Set aside.
2. Add the Tegel Chicken Thigh Fillets to the pan and brown quickly over a high heat.
3. Add the wine or water to the pan. Return the vegetables and add the Wattie's Condensed Tomato Soup and sprigs of thyme.
4. Cover and simmer gently for 30 minutes or until the chicken is tender.
