Cashew and Chilli Pork Rolls
Spice up mealtimes with the exotic flavours of apricots, ginger, sweet chilli and couscous.

Ingredients
- 1/2 cup instant couscous
- 3-4 Tbsp finely chopped dried pears, apples or apricots
- 2 spring onions, trimmed and sliced
- 1/4 cup roughly chopped cashews or peanuts
- 2 tbsps freshly chopped coriander or parsley
- 3/4 cup Wattie's Bit on the Side Sweet Chilli Sauce
- 6 x 100% New Zealand Trim Pork Schnitzels
- 410g can Wattie's Chopped Tomatoes in Juice
- 1/2 cup water
Method
1. Pour ½ cup boiling water onto the instant couscous, stir then leave to stand for 5 minutes before fluffing with a fork.
2. Mix together the couscous, dried fruit, spring onions, nuts, coriander or parsley and 2 tablespoons of Wattie’s Bit On The Side Sweet Chilli Sauce .
3. Divide the filling evenly among the 100% New Zealand Trim Pork Schnitzels , roll up and secure with toothpicks.
4. Brown the pork rolls in a dash of oil in a lidded frying pan. Pour in the tomatoes and water. Cover and gently for 15 minutes, until cooked. Stir in the remaining Wattie’s Bit On The Side Sweet Chilli Sauce before serving. Serve garnished with extra cashews if wished
Note: In place of couscous use 1 cup fresh breadcrumbs&omit Step 1
