Cajun Corn & Potato Fritters

Corn fritters are always a hit and these will be no different. With just 4 ingredients these will be quick and easy to throw together when you are busy. The Cajun is mild so if you like things hot add extra spice or chilli sauce.

Cajun Corn & Potato Fritters

Ingredients

  • 450g bag Wattie's frozen Homestyle Mashed Potato
  • 400g bag Wattie’s frozen Steam Fresh Cajun Style Vegetables
  • 3 eggs, beaten
  • 1/2 cup self-raising flour
  • oil for frying

Tips

This corn has a mild cajun spice but if you like it hotter add 1⁄2 tsp cajun seasoning.

Method

1. Place Wattie’s frozen Homestyle Mashed Potato in a microwave-safe bowl and cover. Cook on high for 6-8 minutes. Remove from microwave and stir until fluffy; set aside to cool for a few minutes.

2. Place both bags of Wattie’s frozen SteamFresh Cajun Style Vegetables in the microwave and heat on high for 4 minutes. Carefully cut open and drain off any excess water and add to the mashed potatoes.

3. Stir in the eggs and sift in the flour. Mix together until smooth.

4. Heat oil in a non-stick frying pan over a medium heat and cook quarter cupfuls of the mixture for 5-7 minutes or until golden brown, turning once.

5. Serve as a brunch or light meal with bacon and slices of avocado.

Found this receipe very bland need a lot more spice, we added sweet chilli sauce and it needs more cajun

I used Wattie's frozen potatoes with garlic and cracked pepper (because didn't have the other)and it is YUM!
