Buck's Roasted Vegetable & Chicken Pizza

Here’s a Buck Shelford favourite. Take the time to make the pizza dough, the taste is worth it. But if you are too busy the topping is still delicious on a bought pizza base.

Buck's Roasted Vegetable & Chicken Pizza

Ingredients

  • Dough
  • 2 1/2 cups strong flour (high grade)
  • 1 1/2 tsp surebake dried yeast
  • 1/4 tsp salt
  • 1 tsp sugar
  • 1 Tbsp olive oil
  • 1 cup luke warm water

  • Topping
  • 5 cups chopped seasonal vegetables, courgettes, capsicum, mushrooms, onion
  • 400g can Wattie's Chopped Tomatoes in Purée
  • 350g cooked, diced lean chicken or ham
  • 1-2 cups grated Edam cheese

Method

1. Place flour, yeast, salt and sugar in the food processor and pulse until mixed through. Pour in the oil and water. Process until it comes together in a ball, adding a little more water if it looks too dry. Remove from processor and shape into a ball and place in an oiled bowl. Cover with plastic wrap and set aside in a warm place to rise.

2. Preheat oven to 200°C. Place vegetables on a baking dish and pour over the Wattie’s Chopped Tomatoes in Purée . Sprinkle with Gregg's Tuscan Seasoning. Bake for 20-30 minutes or until vegetables are tender. Remove and set aside to cool slightly. Increase oven temperature to 220°C

3. When the dough has doubled in size, place on a floured board and roll out to make a large circle. Place dough on a pizza or baking tray.

4. Top with the chicken, cheese and vegetables then bake for 20 minutes or until dough is cooked.
