Ingredients

  • 650 g bag Wattie’s frozen Broccoli & Cauliflower Medley
  • 4 rashers lean bacon, diced
  • 25 g butter
  • 1 leek, sliced and washed
  • 3 Tbsp flour
  • 1 ¾ cups milk
  • ½ cup grated tasty cheese

  • Topping
  • ½ cup fresh breadcrumbs
  • ¼ cup grated cheese

Method

1. Place the Wattie’s frozen Broccoli & Cauliflower Medley in a microwave proof bowl. Cover and cook on high power for 5 minutes. Give the bowl a shake and then cook for a further 2-3 minutes until vegetables are just tender. Drain off any excess water. Pat the vegetables dry with a clean tea towel or paper towels.

2. Place vegetables in a lasagne style dish. Preheat oven to 180°C fan bake.

3. Cook bacon in a dash of oil in a small frying pan. Set aside. Melt the butter in the saucepan and gently cook the leek until softened. Add the flour and stir. Gradually add the milk stirring continuously over a medium heat until the sauce thickens and boils. Reduce heat and simmer a further minute. Remove from the heat and stir in the grated tasty cheese and cooked bacon. Season to taste. Pour the sauce over the vegetables.

4. Sprinkle the topping over the sauce. Bake for 10-15 minutes, until top is golden and vegetables are hot.

Topping

Mix fresh breadcrumbs and cheese together.

Thank you for the join in. This looks like a site that I shall be using a lot, as recipes can be downloaded. As a learner to computers, I am thrilled this will make finding recipes that much easier.
We grow our own veges, and will look forward to this recipe. I will rate it 5, as it looks so delicious.

I really enjoy all your recipes we used to try and write them down from the telly and then found they were also in the womans day mag so cut them out . This recipe book we now have on the lap top is brilliant saves all those pieces of paper pushed into cupboards and getting lost so thankyou so much for tidying up my kitchen. This recipe to me is worth a 5 and again thankyou for all the other lovely recipes. Lynda

This is a really scrummy recipe. I have used fresh cauliflower and brocolli, cooking it in microwave for slightly less time than recipe states and it works well. A regular with us now.
