Boston Bean Pork Layer

We’ve piled up the flavours in this hearty pork dish that uses layers of potatoes, Boston-style baked beans, tomatoes, onions and herbs to create a big eat treat you’ll find hard to beat.

Boston Bean Pork Layer

Ingredients

  • 800 g medium sized waxy red-skinned potatoes
  • 500 g 100% New Zealand Pork Boneless slices, cut into 1cm pieces
  • 420g can Wattie’s Bean There Boston Baked Beans
  • 420g can Wattie's Savoury Tomatoes
  • 1 small red onion, peeled and chopped
  • 1 Tbsp freshly chopped thyme

Method

1. Preheat oven to 180°C, fan bake, 200°C conventional. Wash potatoes and cook in boiling salted water until just tender. Drain and plunge intocold water until cool enough to handle, cut into slices.

2. Heat a dash of oil in a frying pan and brown diced pork slices for 2-3 minutes.

3. In a bowl combine Wattie’s Bean There Boston Baked Beans , Wattie’s Savoury Tomatoes , red onion, thyme and cooked pork, mix well and season with salt and pepper.

4. Spoon half the bean mixture into the base of an 8 cup capacity lasagne Style dish, cover with a layer of cooked potato slices. Repeat the layers, brush potatoes with a little melted butter. Cook for 25-30 minutes or until golden.

Serve with fresh green salad.
