Black Doris Plum Self Saucing Pud

Kids find this pud magical – pour boiling water and jam over the batter and it magically turns into a lovely gooey sauce under the pudding!

Black Doris Plum Self Saucing Pud

Ingredients

  • 2 cups self raising flour
  • 1/4 cup sugar
  • 100g butter
  • 1 egg
  • 1 cup milk
  • 1 tsp vanilla essence
  • Sauce

  • 375g jar Craig's Black Doris Plum Jam
  • 1 cup boiling water

Method

Preheat oven to 180°C.

1. Sift the flour and sugar into a bowl.

2. Rub in the butter until the mixture forms coarse crumbs.

3. Blend the egg, milk and vanilla essence together and pour into the dry ingredients. Mix together gently.

4. Spread the batter over the base of a well greased 2 litre capacity pie dish.

5. Mix the Craig's Black Doris Plum Jam with the hot water and pour carefully over the top of the batter.

6. Bake for 35-45 minutes until the pudding is golden and well risen.

Stand 5 minutes before serving as the sauce is very hot.

Dust with icing sugar.

Serve hot with whipped cream.
