Beef & Corn Tortilla Baskets
If you haven’t tried making tortilla baskets before give it a go they are really not too hard and taste great.

Ingredients
- 470g box Old El Paso Healthy Fiesta Burrito Kit
- 500g lean beef mince
- 400g bag Wattie's SteamFresh Sensations Cajun Style Vegetables
- 1 large tomato, diced
- 1 avocado, diced
- 1 tsp lemon juice
- Fresh coriander (optional)
Tips
This recipe can also be made with lean chicken or beef strips.
Method
1. Preheat oven to 180°C. Take the tortillas from the Old El Paso Burrito Kit and make 2 cuts opposite each other, about 5cm into the tortilla and gently fit each tortilla into muffin tins to make a basket.* Place in the oven for 8-10 minutes to crisp up. Remove from oven and set aside.

2. Microwave both bags of Wattie’s SteamFresh Cajun Style Vegetables according to the directions on the packet.
3. Heat a dash of oil in a non-stick frying pan and add the beef mince and the Mexican seasoning from the Burrito Kit. Continue cooking until mince is cooked. Stir through 1 bag of the Cajun vegetable mix into the mince.
4. When the second bag of Cajun vegetables is cool, gently mix with tomato and avocado and squeeze over lemon juice.
5. Fill the tortilla baskets with warm mince mixture and top with the corn salsa and drizzle over the mild Mexican salsa (from the kit) and garnish with coriander leaves. Serve with a fresh green salad.
