1. Mix together the beef mince, red onion, breadcrumbs, gherkins, thyme, Heinz EZ Squeeze Tomato Ketchup, mustard and egg. Divide mixture into 8 mini burgers.
2. Barbecue Wattie’s Medallions on a lightly oiled plate, over a moderate heat for 8 to 10 minutes each side. Cook burgers alongside medallions for 5 minutes each side.
3. Stack alternately 3 medallions with 2 burgers, secure with a rosemary stalk or skewer. Garnish with a slice of avocado and red pepper.
Serve with salad on the side.
