Baked Butter Chicken with Fresh Tomato Relish

Ingredients

  • 4 Tegel leg and thigh chicken portions (skin off or on)
  • 405g can Wattie's Creamy Butter Chicken Curry Sauce
  • Fresh Tomato Relish
  • 2 large tomatoes, diced
  • 1/2 red onion, diced or 2-3 spring onions diced
  • 1-2 Tbsp chopped parsley, coriander or mint
  • 2 Tbsp each oil and vinegar
Creamy Butter Chicken Curry Sauce

Method

1. Place the Tegel chicken leg and thigh portions in a shallow baking dish. Pour over the can of Wattie's Creamy Butter Chicken Curry Sauce .

2. Bake at 180°C for 45 minutes until the chicken is well cooked and the sauce has browned on top of the chicken.

3. Mix together the salsa ingredients and scatter over the chicken before serving with salad and rice.
