Baked Bean Hash

If the order of the day is breakfast with the lot, you can’t go past this gargantuan effort. Eggs, bacon and baked beans are piled high on a bed of hearty hash browns and served hot or warm. A never-fail, Sunday morning crowd-pleaser.

Baked Bean Hash

Ingredients

  • 500g box Wattie's frozen Original Hashbrowns
  • 420g can Wattie's Baked Beans
  • 5 eggs, well beaten
  • 4 bacon rashers, diced
  • 3/4 cup grated cheese (eg. Parmesan, Edam, Colby, Cheddar)

Method

Place the hash browns in the base of a large baking dish, trimming where necessary.

Pour over the baked beans and spread out evenly.

Beat the eggs together and pour over the top of the baked beans.

Sprinkle the bacon and cheese over the top of the eggs, and season with pepper if wished.

Bake at 200°C towards the top of the oven for 30 minutes until set. Stand for 2 minutes before serving. Garnish with chopped parsley if wished and serve in wedges.

Cooked this tonight, followed the recipe to exact. It was so dry i couldnt eat it, hubby son said it wasnt bad, but they never went up for seconds like they usually do when I cook your meals. This is my first time disapointment.
