This is one of those recipes that remind you of when you were a kid. Very yummy.
Apple and Date Loaf
A classic combination of dates, apple and ginger. Just like your great-grandmother might have made, only you don’t have to pick the apples and chop wood for the stove.

Makes 1 loaf
Ingredients
- 1 cup chopped dried dates
- 1 tsp baking soda
- 400g can Wattie's Simply Diced Apple
- 2 Tbsp crystallised ginger
- 2 Tbsp softened butter
- 1/4 cup boiling water
- 3/4 cup sugar (castor is best)
- 1 egg
- 2 cups self raising flour, sifted
- 2 tsp ground ginger
Method
1. In a bowl put the dates, baking soda, Wattie's Simply Diced Apple , crystallised ginger, ground ginger and boiling water. Stir well.
2. In another bowl mix the butter and sugar together and then beat in the egg. Gradually blend in the date mixture and sifted flour.
3. Spoon into a greased and floured 25cm x 11cm loaf tin.
4. Bake at 180°C for 1 hour or until the cake is cooked when tested with a skewer. Cool in the tin for 10 minutes before transferring to a cake rack to cool.
Serve sliced with butter or a slice of cheddar cheese for a change.
