American Hash Brunch
Sometimes you just need a big start to the day – and this is it! Corned Beef, potato and kumara hash – it’s enough to keep you going all weekend.
Ingredients
- 1 large potato, peeled and diced
- 1 large orange-fleshed kumara, peeled and diced
- 1-2 Tbsp cumin seeds (or ground cumin)
- 340g can Hellaby's Reduced Fat Corned Beef
- 4 spring onions, trimmed and chopped
- 4 eggs
- 4 large tomatoes, halved or 8 small tomatoes
- 1 1/2 Tbsp finely chopped gherkins
- 1 Tbsp chopped fresh parsley
Tips
Serve American Hash, sprinkled with gherkin and parsley and topped with a poached egg and grilled tomatoes.
Method
1. Toss the potato and kumara cubes, with a little oil and the cumin seeds or ground cumin and a good seasoning of pepper. Gently pan fry in a moderately hot frying pan until golden and tender.
2. Dice the Hellaby’s Reduced Fat Corned Beef into 2 cm pieces and add to the pan with the spring onions and cook gently for 4-5 minutes until very hot.
3. Poach the eggs and grill the tomatoes.
