American Hash Brunch

Sometimes you just need a big start to the day – and this is it! Corned Beef, potato and kumara hash – it’s enough to keep you going all weekend.

American Hash Brunch

Ingredients

  • 1 large potato, peeled and diced
  • 1 large orange-fleshed kumara, peeled and diced
  • 1-2 Tbsp cumin seeds (or ground cumin)
  • 340g can Hellaby's Reduced Fat Corned Beef
  • 4 spring onions, trimmed and chopped
  • 4 eggs
  • 4 large tomatoes, halved or 8 small tomatoes
  • 1 1/2 Tbsp finely chopped gherkins
  • 1 Tbsp chopped fresh parsley

Tips

Serve American Hash, sprinkled with gherkin and parsley and topped with a poached egg and grilled tomatoes.

Method

1. Toss the potato and kumara cubes, with a little oil and the cumin seeds or ground cumin and a good seasoning of pepper. Gently pan fry in a moderately hot frying pan until golden and tender.

2. Dice the Hellaby’s Reduced Fat Corned Beef into 2 cm pieces and add to the pan with the spring onions and cook gently for 4-5 minutes until very hot.

3. Poach the eggs and grill the tomatoes.
